Poached Egg with avocado

1 x Free Range egg for poaching
1 x Slice of favourite bread
1 x Handful fresh spinach
1/2 Ripe avocado
Pinch of sea salt and black pepper
(optional chill flakes )
Bring a pan of water to boil with a little olive oil or white vinegar in it. Reduce to a simmer and crack your egg into the water.
Cook the egg for approximately 2 – 5 minutes depending on how cooked you like your egg.
Meanwhile toast your bread and chop you avocado.
Once your egg is cooked drain using a slotted spoon and some kitchen paper before placing on one half of your bread. On the other half add your chopped avocado .
Finish off with a handful of fresh spinach leaves, some seasoning and if using, some chilli flakes.
