This is a great post workout breakfast or just a super indulgent one for a lazy Sunday morning!
These are so easy to make and utterly delicious. We all know the benefit of protein after a workout, it helps the muscles recover and build that extra layer of muscle tone after you’ve done a hard workout.
These super quick and easy pancakes are a winner even if you aren’t working out, they are light, fluffy and gluten free so no bloating! I put all the ingredients in my NutriBullet and just pour into the pan from there so the washing up is pretty much zero too!!

Gluten Free Banana Pancakes
Serves 1 - 2 (if your willing to share)

Gluten Free, Vegetarian
1 large ripe banana, peeled
2 Free range eggs , Plus 1 egg white
1 heaped teaspoon maca powder
1 tbsp milled flaxseed or linseed
1 tbsp milled chia seeds (if you don’t have just make it 2 tbsp of flax or linseed)
¼ tsp cinnamon
2 tsp coconut oil
Fresh berries, maple syrup and Coconut yoghurt for topping
Put banana, eggs, cinnamon, maca powder, flax and chia seeds into blender and whiz until fully combined into your batter..
In a frying pan add your coconut oil until hot, then drop in your blitzed batter to make small pancakes, you should be able to get 2 -3 in your fry pan at one time.
When your cooking the batter watch for tiny bubbles to form, once they do then flip them over and continue to cook until heated through.
You will get between 3 – 4 pancakes out of the batter.
Top with fresh berries, maple syrup and a dollop of coconut or other yoghurt, you will want to have these everyday they are so good!
